We very seldom bother to spend much time on these ratings, but to not do so for Le Mas de Carassins would be negligent for the hotel and staff, and a real disservice to fellow travelers. We stayed for 10 days on our recent Anniversary trip to Provence. We are now retired but both did years of international travel for business careers and pleasure. These 10 days of our 3 week adventure were the highlight of this and most other travel we have ever done. The property is beautiful - exquisitely gardened and maintained; two remote swimming pools invisible from the rooms and patios, lovely terrace to enjoy leisurely meals. Speaking of meals, we hadn't intended to, but after two dinners there, came home from our day trips every night. Ivan (chef) is a culinary super-star! The five course dinners are on a 15 day rotation, so we never had any repeats! The French know how to do food, and this hotel blew our minds with taste and presentation - absolute fine art! Significantly better than our 8 day cruise on the Rhone with Viking. Ask for Maeve to be your server - excellent English, fun, pleasant, knows everything about the dishes and wines, as well as pointing you to great places to visit in Provence. Wonderful room with a private lounging terrace, probably about 15 rooms total. You know it was good, because most of the guests were French; no little kids.
